Sausage and Sweet Potato Hobo Dinners


                                                           

   As a child my mom worked 3 jobs as a social worker but always made time to make us dinner...She had a way of making something out of anything in the fridge and if it was leftovers even better. 




                                       

Mom made every hobo dinner variation possible. Meat, some kind of potato, and veggies. 




With three kids, 2 of them growing teenage boys that could inhale a bag of groceries, while carrying them in from the car she knew she had to do something that would hold them. The hobo dinners did it.

                                           


 Now it was nothing for them to eat 2 but still it filled them up and it was easy for her to make quickly. Today, we are still eating hobo dinners in my home...and the sausage and sweet potato variation is one of my favorite. The grease from the sausage flavors the sweet potatoes, green peppers, and onions so well.

I know if you try them you and your family will find your favorite variation too.
Sausage and Sweet Potato Hob Dinners

Ingredients
  • 2 Packages Eckrich Sausage
  • 1 Large White Onion
  • 2 Large Green Bell Peppers
  • 4 Medium Size Sweet Potatoes
  • 1 Tablespoon Ground Chipotle Seasoning
  • Salt to Taste
  • Pepper to Taste
Cooking Directions
  1. Preheat oven to 350 degrees. 
  2. Peel and slice sweet potatoes into bite size pieces.
  3. Peel and chop onions into bite size pieces.
  4. Slice sausages and bell peppers into bite size pieces.
  5. Take 4 pieces of foil about 12 inches long and layer sweet potatoes, green peppers, onion, and sausage in each packet.
  6. Sprinkle with salt, pepper, and chipotle seasoning.
  7. Close foil packets and set in baking dish to catch the grease.
  8. Cook for one hour.
  9. Enjoy.
  10. This is also great over a campfire but may take longer than 1 hour to cook.

    And this sounds really yummy,never had it before but I love most meals with sausage and small veggies so I'd definitely keep this in mind.

  8. Is that a Polish sausage? I'm not familiar with it. I like to brown that and add in scrambled eggs. It's delicious. This looks like something my husband would enjoy. We love anything with sweet potato.
