The Best Beef Enchilada Dip


Do you ever just crave a hearty dip that you can eat for dinner? We sure do. In a quest to make quick dinners and lighten our waist lines for the new year this dip will fill you up and please a crowd.
                                               
Take a large pot and spray it with some olive oil and about 1 lb. hamburger meat. Turn your stove on medium and brown the meat. You will want to add about 1 1/2 tsp. of salt,  a few dashes of white pepper, a 1/4 tsp. of minced garlic and 1 small onion cut into chunks. I also love to use Cachere's Louisiana seasoning, give it a couple dashes.
Brown your meat and make sure your onions are cooked thoroughly. Nobody wants a crunchy onion. ***If you like add a green, yellow, or red pepper for extra chunkiness.***
Next take about 1/4 cup of shredded cheddar cheese and mix it into the hamburger mixture.
Once your cheese begins to melt you will want to add about 10 oz. of red enchilada sauce.
 
Bring it to a soft boil and let your cheese melt. Now add about 1/8 tsp. of finely minced garlic, and some more salt to your liking ( I used canned enchilada sauce and it didn't have much seasoning but sometimes I'm happy to make my own too.)
Now fold the beef mixture into each other making sure the spices are all thoroughly mixed and the cheese is melted. At this point, I like to add another 1/4 cup of shredded cheddar cheese.
All you need to do now is get out your favorite tortilla chips and pour some over the top of them and add a dollop of sour cream. Black olives are also delicious on this!!! I can't get my hubby to eat them though.
         If you are out of tortilla chips just pour the mixture over a baked potato. It's delicious.

  12. I have never had a hearty dip. I like the alternative potatoes option but I'm thinking even a taco salad. Your mixture, chips, lettuce and all the other fixings. I tend to have a can of the enchilada sauce in my cupboard.

  13. Dip for dinner is one of my favorites. We make a buffalo chicken dip and then roll it in a wrap for a buffalo chicken meal!

  14. We actually made enchiladas lsat night! But, I ran out of canned enchilada sauce, so I used salsa instead! Turned out great! Have you done that before?

  15. I don't eat meat so I usually stick to veggie based meals.But back in my meat eating days, this would have been great.
