Tomato, Onion, and Pepper Salad

One of my favorite things about Spring, besides the flowers, is all the fresh produce.

I wanted to pop in and share one of my favorite springtime salads with you. It's so easy to make.

1 small white onion
1 medium tomato
1 green bell pepper
1/2 tsp. of Celtic Sea Salt
1/4 of 1 lemon for juice

Slice the tomato, onion, and pepper into small bite size pieces and throw in a bowl. Sprinkle the sea salt and squeeze the lemon juice all over it and mix. Now the best way is to cover it and let it sit in the fridge overnight for all the flavors to mesh. If you really don't wanna wait go ahead and serve it.
Mr.Wade and I have been busy mowing and working in the garden. Tomorrow it is supposed to rain so I am planning on painting inside at the campgrounds. The living room is going from pink (no I didn't paint it that color) to a wonderful blue-green. I can't wait!!!

So make sure to check back in to see the reveal. I am even painting the door to the bedroom with chalk board paint.

What have you been up to?

  13. With the fresh tomatoes coming into season this dish would taste amazing. Im usually too greedy to leave it overnight to mesh the flavors, but that is a good tip so I should really try and be more restrained.
