Pan Fried Chicken Fajita Soft Tacos and Some Good News
My husband and I decided we really needed to cut back eating out for a variety of reasons. One, it's expensive and two, it really isn't as good as eating at home, especially with dishes like this. This is one of those last minute throw it in the pan because I have it at home dishes and it turned out great.

Drizzle some Olive Oil in a pan and let it warm up on medium. While the oil is heating chop up one small white onion and one red pepper into bite size pieces.
Throw it in the pan and let them warm up.
Next cut up 2 cups of cooked chicken into bite-sized pieces and season with Louisiana seasoning and a good splash of Garlic Powder
What really adds flavor to this dish are the next two ingredients. Cut up one lime. Save 2 pieces for later and the other two pieces just squeeze generously over the ingredients in the pan and throw them on in when your tired of squeezing.
For some even more wonderful flavor add several splashes of Chipotle flavored Tabasco. Don't be shy, pour it on there.
Slice up one large tomato and grab whatever cheese you have in the fridge. I had a block of Cheddar so I cut it up into bite-size pieces and loved it.
Grab 8 flour tortillas and some sour cream and put your chicken mixture, cheese, tomatoes, and squeeze lime juice all over it in the tortillas and enjoy.
This was soooo good. I mean good. It saved a fortune to eat it at home.
The good news, besides the good food, is that right after we sat down to eat this my dad called and was having a heart attack. I told him to call 911 and we headed his way. Glad to report after 2 days in the hospital and me staying in the city with his wife, who isn't mobile, I am happy to report it was mild and he is OK. Some medicine changes and more outpatient tests are schedule but whew it was close. I'm praising God.
