A Great Green Chile Bake


I've been adding some more heat to our meals lately. With the hubby's recent stroke we have had to lay off the carbs and sugar and do more proteins and veggies. 

He gave this dish 2 thumbs up. 

It is so simple to make.

Take 3 eggs and crack them in a bowl.

Cut up 1 medium size onion into bite size pieces.

Add 1/2 c. of plain greek yogurt to the eggs and stir.

Now add 1 tsp. Olive Oil to a skillet and throw your onions in and saute them until cooked through.

Add 2 lbs. ground beef (or turkey) and 1 tsp. of each Paprika, Salt, Pepper, Chipotle, Parsley and Sage.

Mix those spices around and then add 1 tsp. minced garlic. Cook until brown.

Add 2 small cans Green Chiles.

Add the egg and yogurt mixture and stir it all together.

Pour it all into a baking dish and spread with cheddar cheese.

Bake at 375 degrees for 15 minutes covered with foil. Then remove foil and bake another 15 minutes.

Remove from oven and serve. 

I pair it with a small side salad loaded with veggies and often times my roasted carrots.

It's so yummy and always a hit in my house.

Green Chile Bake

2 1bs. ground beef
1/2 c. plain yogurt
3 eggs
1 tsp. garlic minced
1 tsp. salt
1 tsp. pepper
1 tsp. paprika
1 tsp. ground chipotle
1 tsp. parsley flakes
1 tsp. sage
1 onion chopped
1 tsp. olive oil
1 c. shredded cheddar cheese
2 small cans green chiles.

Mix mixture into ground beef and spread in casserole dish

Cover with cheese and foil.

Bake at 375 degrees for 15 minutes then take off foil

Remove foil and bake another 15 minutes uncovered.

  8. Yum looks good. I wouldn't add onions or make separate for onions. I'm a very picky person when it comes to things like that. Does it have a bit of spicy kick to it?

  9. I honestly love anything made in a casserole dish. It's like all you have to do is dump and bake and enjoy! And it makes for great leftovers too!
