Sausage and Sweet Potato Hobo Dinners
As a child my mom worked 3 jobs as a social worker but always made time to make us dinner...She had a way of making something out of anything in the fridge and if it was leftovers even better.

With three kids, 2 of them growing teenage boys that could inhale a bag of groceries, while carrying them in from the car she knew she had to do something that would hold them. The hobo dinners did it.
I know if you try them you and your family will find your favorite variation too.
Sausage and Sweet Potato Hob Dinners
Ingredients
- 2 Packages Eckrich Sausage
- 1 Large White Onion
- 2 Large Green Bell Peppers
- 4 Medium Size Sweet Potatoes
- 1 Tablespoon Ground Chipotle Seasoning
- Salt to Taste
- Pepper to Taste
- Preheat oven to 350 degrees.
- Peel and slice sweet potatoes into bite size pieces.
- Peel and chop onions into bite size pieces.
- Slice sausages and bell peppers into bite size pieces.
- Take 4 pieces of foil about 12 inches long and layer sweet potatoes, green peppers, onion, and sausage in each packet.
- Sprinkle with salt, pepper, and chipotle seasoning.
- Close foil packets and set in baking dish to catch the grease.
- Cook for one hour.
- Enjoy.
- This is also great over a campfire but may take longer than 1 hour to cook.

ReplyDeleteAnd this sounds really yummy,never had it before but I love most meals with sausage and small veggies so I'd definitely keep this in mind.
I love the added veggies. I feel like so many people do meat and potatoes and leave out the color! This looks like a well-balanced meal!
ReplyDeleteIs that a Polish sausage? I'm not familiar with it. I like to brown that and add in scrambled eggs. It's delicious. This looks like something my husband would enjoy. We love anything with sweet potato.
