Creamy Chicken Caesar Pasta Salad

                                                                         

I've been experimenting with all types of salad this Summer because it's hot and it's Oklahoma and we are surviving desert like conditions so dinner has needed to become more creative lately. I have seen other recipes similar to this and so I decided to show you how I like to make mine. It's so very simple and filling and you can eat on it for a few days. My kind of meal


What you will need:

1 rotisserie chicken
3 or 4 tomatoes ( I pulled mine from my garden)
3 heads of romaine lettuce
croutons 
1 bag of elbow macaroni
1 small bag of sunflower seeds
3/4 c. of asiago cheese
1 bottle of Newman's Own Caeser salad dressing




The first thing I do is tear off about 3/4 of my chicken and stick it on a cutting board.



                                                  Cut into bite size pieces.



Then I wash 2 heads of romaine lettuce. Tear the lettuce into bite size pieces and stick it into a large bowl that you can keep in the fridge. ( By the way, have you noticed it's hard to find the good plastic bowls with lids at Target and Wal-Mart anymore?)




I gather up the rest of my ingredients and make sure they are close at hand.




For the month of July we were spoiled with delicious tomatoes of all kinds from the garden, now the heat is making them disappear and so are the rabbits. Chop your tomatoes into bite size pieces too.



With your asiago cheese just roughly cut it into small pieces...you don't have to be formal and use a grater it's just more dishes to wash and the cheese tastes better like this anyway.




Now it's time to throw it all together in the bowl and stir it up. Veggies, chicken, cheese, croutons, and seeds.  I use about 6- 8 oz's of the dressing and keep mixing well.

Last but not least boil about 6 oz.'s of your favorite pasta or like me whatever pasta you have on hand and then rinse and drain and stir it on in.

If you want your salad to be super yummy let it hang in the fridge for at least an hour so it chills.

                             


Then serve it on up and enjoy.

****Add-in ideas you may have on hand might be.....any color of bell pepper, mushrooms, and olives. *****

Now if you excuse me I have to go back to my ridiculously long to do list...we are trying to finish the interior of the house and the new siding and fence before Winter temps. arrive while surviving Summer. 10 weeks and counting.

  14. MMM! Any salad with Asiago and sunflower seeds is sure to peak my interest. I'd never thought to buy a rotisserie chicken for a salad before, and it sounds like a great way to streeeetch the meat even further. I'd love to sink my fork right in.

  17. I've seen this dressing before but haven't tried it! I'm always hesitant about some Caesar dressings because they've got that really heavy anchovy taste. Do they use anchovies or anchovy paste in this dressing?

  18. Some of us don't have fresh tomatoes so I will grab mine from the store! This sounds good. I don't have a lot of salads with chicken so this will be a treat. I'm interested in the Asiago cheese too.

  27. I love cheese on my salad. I would definitely make this but I have to find a substitute for asiago cheese. I am not too keen about adding tomatoes. I am sure your tomatoes are perfect for salads but our tomatoes here in the Philippines are good for sautéing.

  31. I haven't encountered any recipe that has sunflower seeds in the list of ingredients. For the longest time, I thought those seeds are only for snacking and they're especially good when eaten with chocolates. What can be the replacement for asiago cheese?
