Splendid Chicken and Mushroom Enchiladas With Sour Cream Sauce

                                          yes. This takes the prize for delicious home cookin. You won't need a Mexican restaurant for enchiladas any longer.

You will need:

2 lbs of chicken pieces cooked at 350 degrees for 45-50 minutes
1 small white onion chopped into bite size pieces
2 cups shredded mexican cheese
1 cup of sour cream
1 pkg. white tortillas (8)
2 small cans of mushrooms drained
15 oz. of chicken broth (homemade or packaged is fine)
1 jar of green enchilada sauce

First things first, cook your chicken in the oven for a good 45 minutes at 350 degrees until done and de-bone it and stick it in a large bowl. Cut up one small white onion and dump it in the bowl and add 1 cup of shredded cheese. Open your cans of mushrooms and drain and dump it into the mixture. Mix it altogether and add salt and pepper to taste then spoon it into your 8 flour tortillas.

Lay your flour tortillas in a baking dish, slightly sprayed with non- stick cooking spray, seam side down. Set them aside.

Now raise your oven temperature to 400 degrees.

For the Sauce

Grab a medium size fry pan and melt a 1/4 cup of butter and add 1/4 cup flour making a roux. Add in 15 oz. of chicken broth and bring the mixture to a boil stirring frequently. 

Once it's boiled take it off the burner and add in 1 cup of sour cream and stir until it's fairly smooth and dump over the enchiladas. 

For even more fun open a jar of green enchilada sauce and spread another cup of shredded cheese over the top and bake at 400 degrees for 20 minutes. 

Yes it's full of calories, yes it's delicious, and yes, it's worth it.

  4. We generally have Enchiladas once or month or so. I usually use ground beef but chicken and turkey make nice variety. And I love Sour Cream and Guacamole on top! My big cooking this week was a huge pot of bean soup using ham hock from our Christmas ham. YUMMY.
