Easy and Delicious BBQ Meatloaf




Well I think we are all still in shock from the game last night.

Whoa is all I have to say.

 Thought I would share a fun recipe with you today that is easy and delicious.

 Now to me meatloaf is never what you would call pretty. It's good but not pretty but is was easy and delicious. I have a few different recipes for meatloaf one was my moms, one was my grandma's, and then a few more I have made up as we go.






Preheat your oven to 400 degrees.
I used about 2 1/2 pounds of hamburger meat and cut up 1 medium red onion and dumped it together in a bowl. Then I salted it generously, used pepper to taste, a dash of fresh minced garlic, and 1 egg. I mixed it all together and used a little more seasoning.




Next shape your meatloaf into an actual loaf in a large pan.



Now usually I prefer to make my own bbq sauce or use my 2nd favorite KC Masterpiece but my fam has really liked Sweet Baby Rays lately so I generously dumped a good 1/4 cup on top of the meatloaf.

Once your oven is preheated bake it for about 45 minutes. Pull it out and slice in pieces and enjoy. It's even better the 2nd day to make a meatloaf sandwich but there were only 2 small slices left because they devoured it.

For easy and delicious you can't beat this.

I like to serve mine with either mashed potatoes, mac and cheese, and then coleslaw or cucumber salad.

    Yep...we were at a Super Bowl Party but...I was there only for the great food. :) :)

  2. Valerie, I make a sweet and sour meatloaf that is a lot like this that we love. Sweet Baby Rays is yummy! I did watch the game, not a big football fan, but watch super bowl with hubby. Even I was surprised at that last pass. lol! Thanks for sharing with SYC.

  6. My family loves meatloaf night. I've never tried BBQ on it before. I usually add cracker crumbs (about 45 Ritz), a little milk, and ketchup to the meat, along with the egg, pepper, salt, and onion. It will be nice to try it with bbq sauce for a change!

  8. Looks so yummy! I put onions in everything. I love onions. I have never tried it with BBQ sauce, just ketchup. I'm going to try the BBQ sauce next time.

  12. Since moving out of my parents' house 3.5 years ago, I haven't made or eaten meatloaf. I may have to try this one. BBQ makes everything taste better.

  15. I love meatloaf with bbq on top. This is one of my go-to meals! And the leftovers are always wonderful. Nothing better than meatloaf with some mashed potatoes and veggies -- yum! OK, now I'm getting hungry :D

  19. well this is new to me. I love Meatloaf, especially in the cold months but I would have never thought of using BBQ sauce instead of my normal ketchup ingredient. I will need to try this new twist.

  20. Fun fact: I have never - in my entire 30 years of existence - eaten meatloaf before! I feel like I would love it. I just never grew up eating it so I never thought to cook it!

  21. My 11 year old is in love with meatloaf -- as in, I'm pretty sure he could eat it every single night! I've never been a huge fan of it, so I forget to make it. Definitely adding this recipe to my Must Try list.
